質要求。
為求架上的食材都是要符合當季最新鮮，因此老闆每次都親身走訪全台各地尋找食材，即便
部分食材產季短，供應量不多，只要夠新鮮好吃，老闆也願意採購來讓客人們來饗用。
除此之外，店內的肉品也是重中之選，選用國家級認證的【CAS新鮮豬肉】，再從中挑出口
感最好的肥瘦黃金比例肉塊，切成剛剛好入口的厚度，肉質油脂香甜。也因為夠新鮮，所以
下鍋煮不會有散掉的情況。
職人手切霜降牛，也是單點率極高的肉品。為了維持滿分的好口感，不惜成本將牛肉原塊上
所有會影響口感的部位通通剃除！留下最精華的部位，才手工片好，端出廚房給客人。
我們對食材如此講究，從產地挑選→食材處理→正式出菜，無一不用心處理，才能將它的美
