Chez Paulette est pour certains la salle de concert, le bar où ils ont passé toutes leurs soirées, à écouter de la musique, à rencontrer des gens, à déguster une bière en refaisant le monde. Plusieurs générations de publics se sont succédé dans ce lieu plein d'histoire.C'est depuis 1969 qu'Yves et Paulette Marchal accueillent du public dans leur établissement, d'abord avec une formule très dancing puis avec des concerts tous les week-ends dans cette ambiance si particulière.
Au fil des années, le pub rock a laissé place à d'autres genres musicaux, offrant aux visiteurs une programmation des plus hétéroclites : rock, punk, jazz, blues, reggae, métal, etc.
Mais c'est surtout grâce à la célèbre Paulette que le lieu acquiert son âme, cette mamie du rock, qui, depuis son plus jeune âge servait au bar, a toujours su animer le pub rock pour en faire un endroit convivial et agréable.
