Langkah
Cuci bebek sampai bersih dan buang bagian pantat/brutu. Lumuri dgn air lemon, garam dan cuka apel diamkan 30 menit. Kemudian cuci kembali sampai bersih dan lumuri dgn parutan jahe dan lengkuas. Diamkan 20 menit. Lumuri bebek dengan bumbu yang dihaluskan : bwg merah, putih, kemiri, ketumbar, merica, kunyit, jahe, lengkuas. Tambahkan serai, daun salam dan daun jeruk. Diamkan 20 menit agar bumbu meresap Siapkan panci presto dan masukkan bebek yang telah direndam bumbu. Beri air sampai menutupi permukaan bebek dan presto sampai empuk. Goreng bebek sampai kecokelatan dan santap bersama sambal
Tips : untuk proses mempresto, bila ingin daging bebek hanya sekedar empuk, hanya diperlukan waktu mempresto 15-20 menit. Tapi bila ingin tulang bebek lunak, diperlukan waktu presto 40-45menit. Aku lebih suka daging empuk jadi aku pakai waktu presto 20 menit.
