La cita més antiga documentada fins el dia d'avui, que parla de l'elaboració del Torró d'Agramunt data de 1741, en unes cartes d'una de les famílies nobles de la vila, la família Siscar.Entre aquests oficis hi ha el de torronaire, el qual resulta ser l’ofici més nombrós, amb un total de set torronaires. Aquest fet ens demostra que l’activitat torronaire a la vila era molt important i sobretot que la tradició es remunta molts més anys abans del 1741.A la fira de Nadal de Barcelona els torronaires d'Agramunt posaven les seves parades en punts diversos de la Rambla i en els portals de les cases més cèntriques, on hi tenien parada fixa. Els torronaires de Xixona també assistien a la fira de Nadal de Barcelona i ben aviat va sorgir rivalitat entre aquests torronaires, els quals ràpidament van ocupar els punts més estratègics de la Rambla, deixant només als valencians la possibilitat d’obrir parada a la fira o bé de llogaruna botiga, amb la despesa econòmica que això suposava.Els torronaires d'Agramunt per diferenciar-se dels de Xixona es vestien de pagès “endiumenjat” i es cobrien el cap els homes amb una barretina musca i les dones amb un mocador de seda blanc.
En l'actualitat la presència de torrons en fires, botigues, supermercats i grans superfícies comercials ha estat un mitjà de reconeixement molt important del Torró d'Agramunt, conjuntament amb els distintius atorgats per la Generalitat de Catalunya i la CEE
