約30年前にがんは日本人の死亡原因のトップになり、この30年間でがんの死亡率は倍に、乳がん死亡率は３倍になりました。その原因は今やタバコをしのいで食生活がトップです。にもかかわらず私たち医師は外来を訪れる患者さんに食事指導はほとんど行ってきませんでした。
それどころか血糖値の高い方に、糖質を６０％以上摂らせて血糖降下薬を処方コレステロール値の高い人に、生活指導をせずにコレステロール降下薬を処方進行がんの患者さんが食事療法を希望すると、それは民間療法だと叱ってやめさせることをしてきました。しかしもう待った無しです。いまこそ食事を見直さなければ。
そこでがん死亡率を次の30年で３分の１にすることを目標に「命の食事プロジェクト」を発足します。がん専門医、料理人、レストラン経営者、生産者、食品メーカー、メディア、地方自治体を発起人として、「おいしいもの」ではなく「体に良いもの」の普及を図ります
